Ingredients: 

  • 4 tbsp olive oil
  • 6 smoked bacon rashers 
  • 4 onions
  • 2 tbsp dried mixed herbs
  • 2 bay leaves
  • 500g mushrooms
  • 1½ kg lean minced beef 
  • 3 carrots 
  • 6 x 400g cans chopped tomatoes
  • 6 tbsp tomato purée
  • 4 celery sticks
  • 8 garlic cloves 
  • large glass red wine (optional)
  • 4 tbsp red wine vinegar
  • 1 tbsp sugar
  • parmesan, to serve 

    Method: 

    Step 1: Heat the oil in a very large saucepan. Sauté the bacon, onions, carrots, and celery gently for 20 minutes until they turn golden. Add the garlic, herbs, bay leaves, and mushrooms, and cook for an additional 2 minutes. 

    Step 2: Heat a large frying pan until it's sizzling hot. Crumble in just enough mince to cover the pan and cook until browned, then mix it in with the vegetables. Continue frying the mince in batches until it's all done. Pour the tomatoes and purée into the pan with the mince and vegetables. Rinse the cans with red wine, if you have some, or a bit of water, and add to the pan along with the vinegar and sugar. Generously season the mixture and bring it to a simmer. Let it simmer slowly for 1 hour until thick and saucy, and the mince is tender. Serve with pasta and a generous sprinkling of Parmesan.

      Method:

      Step 2: In a wok, heat half of the oil over low to medium heat and gently fry the onion until it softens, about 5-6 minutes. Add the garlic and cook for an additional minute. Stir in the spices and sugar, cooking for another minute to release their flavours. Pour in the stock and soy sauce, bring to a simmer, and let it cook for 20 minutes. Transfer everything to a blender and blend until silky smooth. 

      Step 3: Wipe out the pan and fry the chicken in the remaining oil until it is browned all over. Tip the sauce back into the pan and bring everything to a simmer, stir in the peas and cook for 5 minutes. Add a little water if you need to thin the sauce. Serve with rice.

      Step 2: In a bowl, mix together 1 heaped tablespoon of smoked paprika, 1 tablespoon of ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tablespoons of olive oil, the juice of 1 lime, and 4-5 drops of Tabasco. Add a generous pinch of salt and pepper to bring it all together. 

      Step 3: Mix 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper, and 1 finely sliced red chilli (if using) into the marinade, ensuring everything is well coated. 

      Step 4: Heat a griddle pan until very hot and add the chicken and marinade to the pan. 

      Step 5: Using tongs, keep everything moving over high heat for about 5 minutes until nicely charred. If your griddle pan is small, you may need to do this in two batches. 

      Step 6: To check if the chicken is cooked, tear the thickest part in half. If it's still raw, cook it until it's done. When chicken is cooked; put the tortillas in the oven to warm up. Serve them with the cooked chicken, a bag of mixed salad, and a 230g tub of fresh salsa.

      • 30g mayonnaise
      • 4 thick sourdough slices
      • 150g grated cheese 

      Method: 

      Step 1: Heat the oven to 220°C/200°C fan/gas 7. Roughly chop any larger tomatoes and place them in a roasting tin along with the green vines, which add extra flavour. Lightly crush the garlic cloves with the side of your knife and add them to the tomatoes along with the lemon thyme. Drizzle with oil and season generously. Toss everything together with your hands to combine. Roast for 25-30 minutes until the tomatoes are bursting and lightly charred. Carefully remove the garlic skins and mash the garlic into the tomatoes, then cook for an additional 15 minutes. Set aside to cool slightly, then remove and discard the thyme sprigs. 

      Step 2: Spread mayonnaise on the outside of each of the four slices of bread. Spread the roasted tomatoes on the other sides and top with cheese. Place the second slice of bread on top, with the mayonnaise side facing out. Put the sandwiches in a frying pan to cook. Any leftover tomato mixture can be stored in an airtight container in the fridge for up to five days.

      Step 3: Place the pan over medium-high heat. Lay a baking tray or saucepan on top of the toastie and weigh it down with a couple of cans, or use a press if you have one. Fry for 4-5 minutes until golden brown, then carefully turn the toastie, wiping the base of the tray or pan to remove any mayo, and press down again. Cook for another 4-5 minutes until golden and crispy. Cut in half and serve hot.
