Air Fryer Arancini

Ingredients: 

  • 15g unsalted butter

  • 1 onion finely chopped

  • 1 large garlic clove crushed

  • 200g risotto rice

  • 700ml hot chicken or vegetable stock

  • 50g parmesan, plus extra to serve

  • 125g mozzarella

  • 100g plain flour

  • 2 eggs beaten

  • 100g dried breadcrumbs or use panko

  • olive oil spray for misting 

Method: 

Step 1: In a large saucepan, melt the butter over a medium heat. For 5 minutes cook the garlic and onions until softened. Stir the rice and cook for 1 minute and start to add half the stock while stirring well. 

Step 2: For 20 minutes continue to cook the risotto while still adding more of the stock, stirring frequently. Add in the parmesan. On a tray, spread it out and leave it to cool at room temperature. 

Step 3: Cut the mozzarella into 12 pieces and pat dry with kitchen paper. 

Step 4: Divide the risotto into 12 portions and roll each into equal balls. Then flatten one in the palm of your hand and take your mozzarella and place it in the center, fold the edges over to enclose it. Then roll it back into a ball and repeat the process for the remaining portions. 

Step 5: In the flour roll each ball, then in the egg and last in the breadcrumbs until all 12 balls are evenly coated. Chill until it is set and each ball is holding its shape well. 

Step 6: Heat the air fryer to 190C. Drizzle olive oil over the arancini and cook in batches for 10 to 15 minutes until each ball is golden brown. Before serving, sprinkle parmesan on top.
