Air Fryer Beef Tacos

Serves: Makes 8 tacos 

Ingredients: 

  • 500g / 2oz rump or sirloin steak 
  • 1 tsp vegetable oil
  • 1 tbsp Cajun seasoning
  • 1 lime, juice only
  • 8 small soft tortilla wraps
  • lime wedges, to serve
  • pomegranate seeds, to serve (optional)

For the tomato and basil dressing

  • handful fresh basil
  • 3 tbsp olive oil
  • 2 crushed garlic cloves 
  • 1 red chilli, seeds removed, chopped
  • handful cherry tomatoes 
  • salt and black pepper 

Method:

Step 1: Preheat the air fryer to 200C. 

Step 2: Coat the steak in oil, Cajun seasoning, and a squeeze of fresh lime juice. Air-fry for 6 minutes, give the basket a shake, then cook for another 2 minutes until perfectly juicy and seasoned. 

Step 3: Meanwhile, mix all the dressing ingredients together in a bowl until smooth and flavourful. 

Step 4: Wrap the tortillas in foil and pop them into the air fryer for 2 minutes to warm them up until soft and perfectly toasty. 

Step 5: Fill the warm tortillas with the juicy steak, then drizzle with the delicious dressing. Serve with lime wedges for a zesty squeeze, and for a fresh, juicy twist, sprinkle over some pomegranate seeds if you fancy.
