Air Fryer Fluffy Pancakes Recipe
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Cooking spray or a small amount of melted butter for greasing the air fryer basket

Instructions:

Preheat the Air Fryer:

Preheat your air fryer to 350°F (180°C) for about 5 minutes.

Prepare the Pancake Batter:

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Mix Wet Ingredients:
- In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.

Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Let the batter rest for a couple of minutes.

Grease the Air Fryer Basket:
- Lightly grease the air fryer basket with cooking spray or a small amount of melted butter to prevent sticking.

- Using a ladle or measuring cup, pour a small amount of batter onto the air fryer basket to form individual pancakes. Leave enough space between each pancake to allow for expansion.

- Depending on the size of your air fryer, you may need to cook the pancakes in batches. Cook for about 3-4 minutes on one side until the edges are set and bubbles form on the surface.
