Air Fryer Ice Cream Cookie Sandwich

Ingredients:
- 75g butter, softened
- 40g light brown soft sugar
- 40g caster sugar
- 1 tsp vanilla extract
- 1 egg
- 150g plain flour
- ¼ tsp bicarbonate of soda
- 100g plain chocolate chips
- 4 scoops vanilla ice cream
Method:
Step 1: Heat your Morphy Richards Air Fryer to 160C. Following this, beat both sugars and butter together in a bowl until creamy and pale. Next, mix the egg, vanilla and a pinch of salt then fold in the flour and bicarbonate of soda. Once a dough begins to form, add in the chocolate chips.
Step 2: Line your air fryer with foil (this will aid the base of the cookies when cooking). Divide the mixture into 8 balls and place into the lined basket spaced apart. If you use our Dual Basket Air Fryer, you will be able to use both drawers at the same time! Bake for 12-15 minutes until golden brown. Make sure to check the base of the cookies to ensure they are crisp and cooked through.
Step 3: Leave the cookies to cool.
Step 4: Once cooled, add a scoop of ice cream between two cookies to make the ice cream sandwich! This recipe should make enough for four ice cream sandwiches.
Cookies will keep in an airtight container for three days.
