Autumn Spiced Apple And Pecan Cake

Serves: 8 

Ingredients:

  • 200g plain flour
  • 150g soft brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 100g unsalted butter, softened
  • 2 large eggs
  • 2 tbsp milk
  • 2 medium apples (peeled, cored, and diced)
  • 100g pecans, roughly chopped
  • 1 tsp vanilla extract

    Method:

    Step 1: Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 20cm round cake tin.

    Step 2: In the Morphy Richards MixStar, add the flour, soft brown sugar, baking powder, cinnamon, nutmeg, and ginger. Mix on a low setting to combine the dry ingredients.

    Step 3: Add the softened butter, eggs, milk, and vanilla extract into the MixStar. Mix on a medium speed until the batter becomes smooth and well combined.

    Step 4: Stir in the apples and chopped pecans. You can use a spatula to fold them in if you prefer the texture to stay chunky, or pulse gently in the MixStar to combine evenly.

    Step 5: Pour the mixture into the prepared tin, spreading it out evenly.

    Step 6: Bake for 35-40 minutes, or until a skewer inserted into the centre comes out clean. Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

    Step 7: Serve with a dusting of icing sugar or a drizzle of warm caramel sauce for a truly indulgent autumn treat.
