Autumnal Squash & Stilton Soup
Chilly autumn nights call for warm comfort food like this cosy squash and stilton soup recipe!

Ingredients

1/2 a Winter squash, cubed

2 cloves of garlic, sliced

1/2 a large onion, diced

1 small carrot, diced
-
80g of stilton cheese
-
1 salad tomato
-
~700ml of vegetable stock
-
Olive oil
-
Salt
-
Pepper
-
Parsley for garnish
Method
- In a frying pan gently sauté your garlic, onion, and carrot in a little olive oil, season to taste with salt
- Once softened, add the veg from the pan into the Morphy Richards Soup Maker along with your squash, stilton, tomato, and parsley stalks
- Fill up to between the “min” and “max” lines with vegetable stock, approx 700ml
- Set the mode to “smooth” and start
- After 21 minutes, your soup should be ready and blended
- Serve in a bowl with a drizzle of olive oil, chopped parsley, and a crack of black pepper
- Enjoy!
