Baileys Ice Cream

No cook; plus 7 hours freezing
Serves: 10-12 

Ingredients: 

  • 125ml Baileys 
  • 397g condensed milk
  • 600ml double cream
  • Baileys chocolate truffles to decorate, chopped in half (optional) 

Method: 

Step 1: Line a loaf tin with cling film, ensuring there's an overlap on all sides. Use an electric whisk to whip the cream to soft peaks. Then, gently whisk in the condensed milk and Baileys until the mixture thickens slightly and becomes smooth in consistency. 

Step 2: Use a spatula to transfer the mixture into the prepared tin, smoothing the top evenly. Freeze for 7 hours or until completely set. If decorating with chocolates, insert them into the ice cream after 1 hour of freezing, then continue freezing for 6 more hours. To serve, warm an ice cream scoop in hot water, dry it off, and use it to scoop the ice cream.
