Serves: 4 people
Ingredients
- 50g Butter
- 1x Large Onion
- 6x Cloves Garlic
- 2 tbsp Plain Flour
- 500ml Water
- 250g Pickles
- 100g Pickled Jalapeños
- ½ tsp Turmeric
- 500g Potatoes
- 250g Cheddar
- 150g Sour Cream
Method
Step 1: Melt Butter in a large pot over a medium heat. Add the onion and garlic and cook until soft for 5 minutes.
Step 2: Whisk in the flour and let this cook for 1 minute before adding to your Morphy Richards Soup Maker.
Step 3: Next, slowly add water/broth making sure to whisk constantly and season with salt, pepper and turmeric.
Step 4: Add the potatoes and select the ‘Smooth’ setting on your soup maker and wait for the cycle to finish.
Step 6: Add the chopped pickles, cheese, sour cream and mix well. At this stage you can adjust the thickness to your preference.
Step 7: To serve, top with more pickles, sour cream and a sprinkle of chilli flakes.
