Chocolate Ice Cream

Ingredients

  • 8 yolks eggs
  • 250g of high quality cocoa powder, such as Green & Black’s 
  • 200g 70% dark chocolate, broken into pieces
  • 1 liter milk 
  • 175g golden caster sugar 

Method: 

Step 1: Using electric beaters, whisk the egg yolks and sugar until they are very thick and pale. 

Step 2: Pour the milk into a saucepan, add the chocolate and cocoa, and bring to a simmer, stirring constantly until well combined. While still hot, pour this mixture over the yolks, beating continuously.

Step 3: Transfer the chocolate mixture into an ice-cream maker and churn until frozen. Alternatively, pour it into a container and freeze for 2-3 hours until it starts to firm up. Whisk thoroughly to break up any crystals, then freeze until solid. Before serving, allow it to soften in the fridge for 20-30 minutes.
