Air Fryer Christmas Sausage Rolls

Ingredients:
- 6 pork sausages
- 10, finely sliced, sage leaves
- 2 tbsp apple sauce
- 2 heaped tbsp cranberry sauce
- 320g pack ready-rolled puff pastry
- plain flour, for dusting
- 1 egg, beaten
- 2 tbsp nigella seeds (optional)
Method:
Step 1: Remove the sausage meat from the skins and place it in a bowl. Mix in the sage, apple sauce, cranberry sauce, and a generous pinch of salt and black pepper. Set aside.
Step 2: Unroll the pastry, remove the parchment, and place it on a lightly floured surface. Shape the sausage meat into a log, about 4-5cm thick, and position it along the centre of the pastry, ensuring it reaches both ends.
Step 3: Brush the egg over the longer edges of the pastry, then fold one side over to encase the sausage, leaving a lip on one side. Trim any excess pastry, then cut into 6-8 pieces with a sharp knife. Crimp the edges with a fork, glaze the pastry with egg, and sprinkle with nigella seeds if desired.
Step 4: Preheat the air fryer to 200°C and cook the sausage rolls for 20-30 minutes until the pastry is golden and the sausagemeat is fully cooked. Since air fryers vary, check halfway through and adjust the cooking time as needed. These delicious rolls can be stored in the fridge for up to three days.
