Christmas Tree Meringues

Serves: 8 

Ingredients: 

  • 4 egg whites
  • 200g caster sugar
  • ½ tsp cornflour 
  • green food colouring
  • ½ tsp white wine vinegar
  • small edible stars and hundreds and thousands (optional) 

Method: 

Step 1: Preheat the oven to 120C. Line two baking trays with parchment and fit a large piping bag with a star nozzle. In a clean bowl, whisk the egg whites and a pinch of salt to soft peaks using an electric mixer for 1-2 minutes. Gradually add the sugar, one spoonful at a time, whisking well after each addition until you have a thick, glossy meringue. Using the Morphy Richards MixStar whisk in the cornflour and vinegar, then add a few drops of green food colouring for a light green hue. 

Step 2: Spoon the meringue into the piping bag, then pipe a circular base and spiral upwards to form a Christmas tree shape. Top with an edible star, if desired, and sprinkle with hundreds and thousands. Repeat to make 12 trees. Bake for 1 hour until crisp, then turn off the oven and let the trees cool inside for another hour.
