Festive Christmas Crumble

Ingredients:
For the Filling
- 2 apples, peeled and diced
- 2 pears, peeled and diced
- 100g dried mixed fruit (like sultanas, raisins, and currants)
- 50g dried cranberries
- Zest and juice of 1 orange
- 1 tbsp brandy (optional)
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp mixed spice
- 50g light brown sugar
For the Crumble Topping
- 150g plain flour (use gluten-free if preferred)
- 100g vegan butter or regular butter, cubed and chilled
- 50g light brown sugar
- 50g oats
- A pinch of salt
Method:
Step 1: In a large mixing bowl, combine the diced apples, pears, dried mixed fruit, and cranberries. Add the orange zest and juice, brandy (if using), cinnamon, nutmeg, mixed spice, and brown sugar. Stir well to coat the fruit in the spices and sugar. Let the fruit mixture sit for 15-20 minutes so the flavours can meld. Step 2: In another bowl, combine the plain flour and chilled butter cubes. Rub the mixture together with your fingertips until it resembles breadcrumbs. Stir in the light brown sugar, oats, and a pinch of salt. The oats add a lovely texture to the crumble, making it extra hearty.
Step 3: Preheat your oven to 180°C (160°C fan) or gas mark 4. Spoon the fruit filling into a deep baking dish, spreading it out evenly. Sprinkle the crumble topping over the fruit, ensuring it’s well covered. Place the crumble in the oven and bake for 35-40 minutes, or until the top is golden and the fruit is bubbling around the edges.
