Guinness Chocolate Melt in the Middle Puddings | St. Patricks Day recipes

Celebrate St. Patrick's Day with a decadent twist on traditional dessert. Indulge in these delicious Guinness chocolate melt-in-the-middle puddings, perfectly infused with the rich taste of Ireland's famous stout!
Ingredients:
- 150g unsalted butter, plus extra for greasing
- 200g dark chocolate (70% cocoa), roughly chopped
- 90g golden caster sugar
- 3 large eggs
- 90ml Guinness
- clotted cream for serving (optional)
Method:
Step 1: Start by buttering 4 9 x 5cm ramekins and then set to one side for later.
Step 2: In a heat-proof bowl, add the butter, chocolate and a good pinch of salt. Place over a small pan of boiling water and stir until melted, before removing from the heat and leaving to cool.
Step 3: In a large mixing bowl, tip in the sugar and eggs and then beat with an electric whisk until thick, pale and almost doubled in volume.
Step 4: Now gently fold in the melted chocolate and the Guinness. Be careful not to over mix.
Step 5: Carefully spoon the mixture into your 4 ramekins and then chill in the fridge for 1 hour.
Step 6: In the meantime, pre-heat your oven to 200c/180c fan/gas 6 and place a baking tray on the top shelf to heat up.
Step 7: Place the ramekins on the hot baking tray and then place in the oven to cook for around 18 minutes.
Step 8: Remove from the oven and allow to stand for 1-2 minutes, before serving with a dollop of clotted cream or ice cream!
