Preparation: 10 minutes
Cooking Time: 12 minutes
Serves: 20 biscuits
Ingredients:
For the cookies
- 140g icing sugar sieved
- 1 tsp vanilla extract
- 1 egg yolk
- 250g butter cut into small cubes
- 375g plain flour sieved
To decorate
- 200g icing sugar sieved
- Edible food colouring optional
- Edible gold Christmas sprinkles/decorations
Method:
Step 1: To begin, add the icing sugar, egg yolk, butter and vanilla extract into a mixing bowl, then stir together with a wooden spoon or for ease, use our Total Control Hand Blender to pulse until well combined. Next, add the flour and mix to a firm dough.
Step 2: Shape the dough into two flat discs, wrap them and chill for 20-30 minutes. In the meantime, preheat your oven to 190C fan / 170C gas 5 and line 2 baking sheets with non-stick baking paper.
Step 3: Next, roll out the dough on a lightly floured surface to the thickness of two £1 coins. Then, using Christmas themed stencils, cut out a variety of shapes and place onto the baking sheets. Place in the oven to bake for 10-12 minutes until the cookies are a light golden brown colour.
Step 4: Once cooked, lift the biscuits onto a wire rack to cool. Whilst your cookies are cooling, mix together the icing sugar with a few drops of cold water to ensure the consistency is thick, but still runny. You can add food colouring to the icing if you’d like! Once the cookies are cooled, spread the icing and add your Christmas sprinkles and decorations!
