This Slow Cooker Chilli recipe is a family favourite, packed with hidden vegetables to nourish our bodies. Ingredients:
- 1 tbsp rapeseed oil
- 1 large onion finely chopped
- 2 garlic cloves crushed
- 2 tsp ground cumin
- 1 ½ tsp sweet smoked paprika
- 1 tsp mild chilli powder (optional)
- 2 carrots diced
- 2 sticks celery diced
- 1 courgette diced
- 1 red pepper diced
- 400g lean beef mince
- 3 x 400g cans chopped tomatoes
- 1 beef stock cube
- 1 tbsp tomato purée
- 1 x 400g can green lentils
- 1 x 400g can flageolet beans
- a selection of the following to serve: rice for tacos, soured cream, grated cheese and sliced avocado
Method:
Step 1: Warm the oil in a sturdy pan. Fry the onion for 10 minutes until soft and slightly browned. Stir in the garlic and spices, and cook for 1-2 more minutes.
Step 2: Put everything in your multi cooker: the chopped vegetables, minced meat, cut-up tomatoes, stock cube, and tomato paste. Mix it well. Cook on low for 6-7 hours. About 30 minutes before serving, remove the lid and blend the vegetables with a stick blender (if your kids don’t like seeing veg) or leave them as they are.
Step 3: Mix in the lentils and flageolet beans. Put the lid back on and heat for another 30 minutes. Stir and serve with rice or tacos, sour cream, grated cheese, and sliced avocado.
