Jam Tarts


This jam tarts recipe is super easy and delivers a deliciously sweet treat that everyone will love. The process is simple, with just a few ingredients and minimal effort, making it the perfect easy jam tarts recipe for any occasion. Enjoy light, buttery pastry filled with your favourite jam, ready in no time!

Cook time: 18 minutes 
Serves: 12 

Ingredients: 

  • 250g plain flour, plus extra for dusting
  • 125g  chilled and diced butter, plus extra for the tin
  • 1 medium egg
  • 1 vanilla pod, seeds scraped (optional)
  • 100g jam, fruit curd or marmalade of your choice 

Method: 

Step 1: Place the flour, butter, and a pinch of salt in a bowl, and rub together with your fingertips. Once the mixture resembles fresh breadcrumbs, mix in the egg and vanilla seeds (if using) with a knife. Add 1 tbsp of cold water to bring the dough together. If needed, add another tbsp but no more. Wrap in cling film and chill in the fridge for 30 minutes. 

Step 2: Preheat the oven to 200C/180C fan/gas 6. Butter a 12-hole tart tin and lightly flour your work surface. Roll out the chilled pastry to the thickness of a £1 coin, then use a cutter to make 12 circles, just big enough to fit the tin. Add 1-2 teaspoons of your favourite filling to each one. 

Step 3: Bake for 15-18 minutes until golden and the filling gently bubbles. Let them cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
