Jam Tarts
This jam tarts recipe is super easy and delivers a deliciously sweet treat that everyone will love. The process is simple, with just a few ingredients and minimal effort, making it the perfect easy jam tarts recipe for any occasion. Ingredients:
- 250g plain flour, plus extra for dusting
- 125g chilled and diced butter, plus extra for the tin
- 1 medium egg
- 1 vanilla pod, seeds scraped (optional)
- 100g jam, fruit curd or marmalade of your choice
Method:
Step 1: Place the flour, butter, and a pinch of salt in a bowl, and rub together with your fingertips. Once the mixture resembles fresh breadcrumbs, mix in the egg and vanilla seeds (if using) with a knife. Add 1 tbsp of cold water to bring the dough together. If needed, add another tbsp but no more. Wrap in cling film and chill in the fridge for 30 minutes.
Step 2: Preheat the oven to 200C/180C fan/gas 6. Butter a 12-hole tart tin and lightly flour your work surface. Roll out the chilled pastry to the thickness of a £1 coin, then use a cutter to make 12 circles, just big enough to fit the tin. Add 1-2 teaspoons of your favourite filling to each one.
Step 3: Bake for 15-18 minutes until golden and the filling gently bubbles. Let them cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
