Ingredients:
85g pack of sage and onion stuffing mix
300g sausage meat
90g cooked chestnuts, chopped
50g dried cranberries
12 rashers of bacon (smoked streaky or pancetta)
Method:
Step 1: Place the stuffing mix into a bowl and pour over 150ml of boiling water. Allow the mix to soak up all the water. Once it has cooled, add in the sausage meat, chestnuts, and cranberries.
Step 2: It's time to get your hands messy as you bring everything together. Take each rasher and cut it in half lengthways, resulting in 24 long strips of bacon.
Step 3: Take two bacon strips and cross them. Roll a ball of stuffing, roughly the size of a walnut (4cm) and place it on the crossed bacon. Gently wrap the stuffing in the bacon before placing it on a lightly greased baking tray, ensuring the cross-side is facing up. Repeat this process until you have created a delightful dozen. Can be made up to two days ahead and chilled.
Step 4: When you're ready to indulge, preheat your oven to 200°C/180°C fan/gas 6, and place the stuffing balls in the oven. Let them roast away for 25-30 minutes until the bacon is crispy and the stuffing inside is cooked to perfection.
