Slow Cooker Vegetable Lasagne

Ingredients:
- 1 tbsp rapeseed oil
- 2 onions
- 2 large garlic cloves
- 2 large courgettes(400g)
- 1 red and 1 yellow pepper, deseeded and roughly sliced
- 400g can chopped tomatoes
- 2 tbsp tomato purée
- 2 tsp vegetable bouillon
- 15g fresh basil, chopped also with a few leaves
- 1 large aubergine, sliced lengthwise or widthwise to maximize surface area
- 6 wholewheat lasagne sheets (105g)
- 125g vegetarian buffalo mozzarella
Method:
Step 1: Heat 1 tablespoon of rapeseed oil in a large non-stick pan. Add 2 sliced onions and 2 chopped large garlic cloves. Cook for 5 minutes, stirring until softened.
Step 2: Add 2 large courgettes, diced, 1 red pepper and 1 yellow pepper, roughly sliced, along with 400 grams of chopped tomatoes, 2 tablespoons of tomato purée, 2 teaspoons of vegetable bouillon, and 15 grams of chopped basil.
Step 3: Stir thoroughly, cover, and cook for 5 minutes. Avoid adding extra liquid, as the vegetables will release plenty of moisture as they cook.
Step 4: Slice one large aubergine. Arrange half of the aubergine slices on the bottom of the slow cooker and layer with 3 sheets of lasagne.
Step 5: Layer a third of the ratatouille mixture over the aubergine slices, followed by another layer of 3 lasagne sheets. Repeat with the remaining ratatouille mixture to complete the assembly.
Step 6: Cover and cook on High for 2½ to 3 hours until the pasta and vegetables are soft. Switch off the appliance.
Step 7: Sprinkle 125 grams of vegetarian buffalo mozzarella evenly over the vegetables. Cover the dish and let it rest for 10 minutes to allow the cheese to melt and blend with the vegetables.
Step 8: Garnish with additional basil and accompany with a handful of rocket.
