Smash Burgers
These smash burgers are incredibly tasty because they’re cooked to perfection, creating a crispy, caramelised crust that’s bursting with flavour. The melty cheese oozes over the juicy patties, adding a rich, creamy texture. Each bite is delicious.

Serves: 4
Ingredients:
- 4 burger buns
- 1 tbsp sunflower oil
- 500g steak mince, 15-20% fat is good
- 4 slices mild cheddar, or burger cheese
- 1 red onion, finely sliced
- handfuls of iceberg lettuce
- 2 tomatoes
- 1 large gherkin, sliced lengthways
- to serve either mayonnaise, ketchup and American mustard, or your preferred sauces
Method:
Step 1: Slice the burger buns in half and toast or grill the cut sides until golden. Set them aside. Preheat the oven to 100°C/80°C fan/gas ¼.
Step 2: Divide the mince into four mounds and season each generously with salt. Heat ¼ tablespoon of oil in a heavy frying pan or skillet over high heat. Place one of the mounds in the pan and, working quickly, cover it with a square of baking parchment. Use a smaller pan or the end of a rolling pin (wearing oven gloves if needed) to press the beef patty down firmly, being cautious of the heat and steam. Cook for 2 minutes.
Step 3: Remove the parchment and flip the patty over. Press down with a spatula, then top with a slice of cheese and cook for 1 minute. Transfer the patty to a baking tray and keep warm in the oven while you cook the remaining burgers in the same way.
Step 4: To assemble the burger, layer the bun base with onion, lettuce, and tomato slices. Add a juicy patty, top with gherkin slices, and finish with the bun top. Serve with your favourite sauces on the side.
