Smashed Avocado On Toast
This avocado recipe is packed with fiber, healthy fats, and essential vitamins. This is a great breakfast option because avocados taste yummy due to their creamy texture and rich flavour.

Ingredients:
- 4 plum tomatoes, cut in half
- 4 slices of wholegrain or sourdough bread
- 1 small avocado, peeled and pitted
- Juice of ½ lemon A pinch of cayenne pepper
- A handful of cress or baby rocket leaves for serving
Method:
Step 1: Grill the tomatoes until they are soft and slightly charred, about 20 minutes. Meanwhile, toast the bread until it's crispy and golden. Mash the avocado with lemon juice and a touch of cayenne pepper until smooth, then spread this creamy mixture over the toasted bread. Top with the grilled tomatoes and a scattering of fresh cress or baby rocket leaves for a vibrant finish.
