Ingredients
- 4 large green peppers (to be carved like mini pumpkins)
- 1 tbsp olive oil
- 1 onion, chopped
- 1 garlic clove, minced
- 200g cooked quinoa or rice
- 100g cooked chicken, chopped (optional)
- 1 can of mixed beans
- 1 tsp ground cumin
- Salt and pepper, to taste
- Grated cheese (optional)
Method
Step 1
To prepare the peppers, preheat your oven to 180°C. Slice the tops off the peppers and remove the seeds. Using a small knife, carve out spooky faces on each pepper, just like you would with a pumpkin! It’s a fun activity that the kids can join in on, making it one of those easy Halloween treats the whole family can enjoy.
Step 2
For the filling, heat the olive oil in a large pan over medium heat. Sauté the onions and garlic until softened.
