Strawberry Mousse

Ingredients
- 250g fresh strawberry, halved if large
- 25g caster sugar
- 140g mini marshmallow
- 200ml double cream
Method
Step 1: Place all but two strawberries into a pan with 100 ml of water and the sugar. Cook over medium heat for about 3 minutes, until the strawberries are soft and easily mashed. Remove from heat and mash the berries with a fork until they reach a pulpy consistency. Add the marshmallows and stir until they melt into the hot strawberries. Allow the mixture to cool.
Step 2: Whip the cream until it forms stiff peaks. Gently fold the whipped cream into the cooled strawberry mixture. Spoon the combined mixture into a single bowl or individual serving pots, then refrigerate for about 2 hours, or until set. Halve the reserved strawberries and use them for garnish.
