Turkey bubble and squeak
If you're looking for a delicious and easy way to use up your leftover turkey, then you need to try this turkey bubble and squeak recipe. It's a classic British dish that's perfect for breakfast, brunch, or even dinner.

Serves: 4-6
- 700g leftover cooked potatoes
- 300g leftover cooked brussel sprouts
- 2 tbsp goose fat
- 1 onion, sliced
- 1 garlic clove, crushed
- 300 g cooked and shredded turkey
Step 1: Preheat the oven to 200°C (180°C fan) or gas mark 6. Mash your leftover potatoes and roughly chop the brussel sprouts. Mix into the mashed potatoes and season.
Step 2: Add 1tbsp of goose fat to a nonstick frying pan. Mix the onion and fry gently for 10min until softened. Season and slowly stir in the garlic and cook for a further 3min.
Step 3: Add the onion mixture along with the turkey into the mashed potato mix and stir together. Heat the remaining fat in the frying pan and add on top of the mashed potato mix. Press down and cook over a medium low heat for 5min the put into the oven to cook for 15-20min until golden on top.
Step 4: Serve how you wish.
