Soup Maker Broccoli & Stilton Soup
Broccoli and Stilton soup is a British classic. The seasonal, thick and wholesome soup recipe is the perfect winter warmer to enjoy this cold January. Using our convenient soup maker, you can enjoy a bowl of delicious homemade soup in as little as 21 minutes.

Serves: 4
Ingredients:
- 1 onion, finely chopped
- 1 celery stick, sliced
- 1 leek, sliced
- 1 medium potato, diced
- 750ml low salt or homemade chicken or vegetable stock
- 1 head broccoli, roughly chopped
- 140g stilton or other blue cheese, crumbled
Method:
Step 1: Put all the ingredients into the soup maker, except the stilton, and press the ‘smooth’ function. Make sure you don’t fill the soup maker above the max fill line.
Step 2: Once complete, make sure to season to taste and stir in most of the stilton. Briefly blend once more until the cheese has melted into the soup. Season with a little more black pepper and top with the remaining cheese to serve.

Excellent soup! Used some left over bits from Christmas to make this and it is delicious. Will definitely be doing this recipe again. NB I did soften the onions first before adding ll the other ingredients.
