Pea & Mint Soup
Is there anything more comforting than a big bowl of soup and some crusty bread?! This pea and mint soup is warming, refreshing and nourishing. Plus it’s so quick and easy to make!
Ingredients:
- 1 onion, peeled & diced
- 2 garlic cloves, minced
- 700g frozen peas
- 1 medium potato, peeled & diced
- 700ml boiling water
- 2 vegetable stock cubes
- Salt and pepper (to taste)
- A bunch of fresh mint leaves (or 1-2 tbsp dried mint)
- A squeeze of lime juice
Method:
Step 1: Place everything in the soup maker and set to smooth.
Step 2: Now add the fresh mint leaves and blend again and serve.
My soup maker said use cold liquid not hot as your recipe quotes
Sorry ignore my last message re step 1 / 2 I realised after I sent what it meant ….
Not quite clear when you say step 1 then step two
Do you mean add the mint straight after step 1 only I’ve read on similar recipes where you only add the mint at the end for a few minutes.. I have the MR sauté mobel … Look forward to your reply ….
