  • 1 head of broccoli, cut into florets

  • Salt

  • 1 tsp cracked black pepper

  • 2 tbsp unsalted butter

Heat a griddle pan until it is very hot, then cook the steaks to your preferred level of doneness: 2½ minutes on each side for medium-rare, 3½ minutes for medium, or 4½ minutes for well-done. Allow the steaks to rest for 5 minutes before topping each with a small knob of butter.

This roast chicken with herb butter and vegetables is a wholesome and delicious healthy chicken recipe that’s perfect for a quick midweek meal. Using the Morphy Richards 6.5L Multifunction 10-in-1 Food Cooker, it’s easy to prepare tender, flavourful chicken with perfectly cooked vegetables in one pot. As a healthy recipe, it’s a balanced option and truly one of the best meal ideas for a stress-free dinner!

Ingredients:

  • 1 whole chicken (1.5–2 kg)

  • 3 tbsp unsalted butter, softened

  • 3 garlic cloves, minced

  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)

  • 1 tbsp fresh thyme, finely chopped (or 1 tsp dried)

  • 1 lemon, halved

  • Salt and freshly ground black pepper

  • 1 large onion, quartered

  • 2 carrots, cut into large chunks

  • 2 celery stalks, cut into large chunks

  • 100 ml chicken stock or water

Method:

Step 1: Rinse the chicken inside and out, then pat it dry with kitchen paper. Gently loosen the skin over the breast using your fingers, taking care not to tear it.

Step 2: In a small bowl, mix the softened butter with the minced garlic, rosemary, thyme, salt, and pepper. Spread the herb butter under the loosened skin and over the outside of the chicken.

Step 3: Stuff the cavity of the chicken with the lemon halves and one or two onion quarters. Season the outside of the chicken generously with salt and pepper.

Step 4: Place the onion, carrot, and celery chunks in the bottom of the cooker pot to create a bed for the chicken. Pour the chicken stock or water into the pot to prevent the vegetables from burning and to keep the chicken moist.

Step 5: Place the chicken on top of the vegetable bed, breast-side up. Select the Roast function on the multifunction food cooker menu settings and set the temperature to 200°C. Roast the chicken for 60 minutes, or until the internal temperature of the thickest part of the thigh reaches 75°C (use a meat thermometer to check).

Step 6: Once cooked, carefully remove the chicken from the cooker and let it rest for 10–15 minutes before carving. Use the roasted vegetables and juices as a base for gravy or serve them alongside the chicken.
