Spooky Stuffed Peppers: Halloween Treat Ideas For The Kids

Ingredients

• 4 large green peppers (to be carved like mini pumpkins)
• 1 tbsp olive oil
• 1 onion, chopped
• 1 garlic clove, minced
• 200g cooked quinoa or rice
• 100g cooked chicken, chopped (optional)
• 1 can of mixed beans
• 1 tsp ground cumin
• Salt and pepper, to taste
• Grated cheese (optional)

Method

Step 1

To prepare the peppers, preheat your oven to 180°C. Slice the tops off the peppers and remove the seeds. Using a small knife, carve out spooky faces on each pepper, just like you would with a pumpkin! It’s a fun activity that the kids can join in on, making it one of those easy Halloween treats the whole family can enjoy.

Step 2

For the filling, heat the olive oil in a large pan over medium heat. Sauté the onions and garlic until softened. Stir in the cooked quinoa or rice, beans, chicken (if using), cumin, and season with salt and pepper. Step 3

Next, fill each carved pepper with the mixture and top with grated cheese if you like. Place the peppers in an ovenproof dish and bake for 20-25 minutes, until the peppers are tender and the cheese is melted.
