Roast Tomato and Basil Soup

Preparation time: 30 minutes
Cooking time: 21 minutes
Setting: Smooth
Serves: 4

Ingredients:

  • 8 very ripe tomatoes (640g) cut in half
  • 2 red onions (215g) cut into wedges
  • 4 garlic cloves
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and ground black pepper
  • 750ml chicken stock, made from stock cube
  • 2 tsp tomato puree
  • 1 tsp brown sugar
  • 10g fresh basil leaves

Method:

Step 1: Pre-heat the oven to 200oC / Gas Mark 6.

Step 2: Place the tomatoes skin side up into a roasting tin with the red onion and garlic.
Step 3: Drizzle over the olive oil, balsamic vinegar and season with salt and milled pepper.
Step 4: Roast for 20-30 minutes until softened and slightly charred.

Step 5: Carefully place the roasted vegetables into the Soup Maker pour in the chicken stock, add the tomato puree, brown sugar, fresh basil.

Step 6: Select the smooth setting. Once the soup is ready, season to taste and serve.

 

Celery Soup

Preparation time: 5 minutes
Sauté preheat: 1 minute
Sauté vegetables for: 4 minutes
Smooth setting duration: 21 minutes
Total cooking time: 26 minutes
Setting: Smooth
Serves: 4

Ingredients:

  • 25g butter
  • 1 head of celery, roughly chopped (including leaves)
  • 1 onion (approx 100g), chopped
  • 3 small potatoes (approx 150g) peeled and chopped
  • 1L of vegetable stock (made with 2 stock cubes)
  • Salt and ground black pepper
  • Fresh parsley to garnish

Method:

Step 1: Add the butter to the Jug and press the Sauté Button. Ensure the butter does not burn. 

Step 2: After a minute, add the vegetables, and stir for 4 minutes with a wooden spoon or spatula.

Step 3: Turn off the sauté function by pressing the Sauté Button. Add the stock to the MAX mark.

Step 4: Place the Lid on the Jug and select the Smooth Setting. Once the soup is ready, check the seasoning and garnish with freshly chopped parsley.

Pea & Mint Soup

Ingredients:

  • 1 onion, peeled & diced
  • 2 garlic cloves, minced
  • 700g frozen peas
  • 1 medium potato, peeled & diced
  • 700ml boiling water 
  • 2 vegetable stock cubes
  • Salt and pepper (to taste) 
  • A bunch of fresh mint leaves (or 1-2 tbsp dried mint)
  • A squeeze of lime juice

Method:

Step 1: Place everything in the soup maker and set to smooth. 

Step 2: Now add the fresh mint leaves and blend again and serve.
